Hi Susan - This recipe has been modified since Mr. TLRT's heart attack last summer ..... beef is no longer welcome at The Little Round Table and to tell you the truth I can't tell the difference with the lean ground turkey.Red Sauce With Lean Ground TurkeyThere is no real recipe for this red sauce, there is a list of ingredients that vary with what'sin season and what I still have available from last year's garden.1 - 1 1/2 pounds Ground lean turkey1 med onion diced (garden fresh if available)1 1/2 large bell peppers, red and/or orange(1/2 C diced, 1 cup in thin strips)1 C chopped celery2 tablespoons fresh oregano2 dried hot chiliessalt and pepper to tasteYour own tomato sauce or store bought1 Cup of WaterFreshly grated ParmesanPasta of your choice, this time I used rotiniSaute turkey in a tiny bit of oil, diced onion, 1/2 C diced bell pepper, chopped celery, crumble chilis overmixture add oregano, salt and pepper to taste, stir in tomato sauce + 1 Cup Water and simmer for 1-3 hours. Prepare pasta, top with sauce, add the still crunchy strips of sweet peppers( I flash fry these at the end ), add parmesan and enjoy!The forum wasn't being used so I removed it from the template. I prayed mightily for him and you and will continue to do so.I do miss the forum, though.
